Where Does the Food Go?

Growing season has surely begun, and we’ve started growing lots of vegetables in our greenhouses.  So where does the food go?  While only some has been used for food demonstrations, everything else has been sent to our Culinary Department where other students use the produce to prep lunches for the entire Youth In Transition School!  So far the YIT School Farm has been able to offer several pounds of sunflower sprouts, pea shoots, mesclun mix, arugula, and romaine lettuces for use in their salads.  And to think, we’re just getting started!

The Culinary Department looks forward to when we will have tomatoes, fresh herbs, carrots, beets, cabbage and much, much more! The staff have also enjoyed purchasing fresh cut heads of Romaine lettuce straight from the YIT School Farm!  Now that’s fresh!  All proceeds will go directly towards the Horticulture Program and we thank everyone for supporting this wonderful cause of educating our youth.
